Brewing into an open vessel seems unnecessary, but for us, it seems like a challenge! This Cold IPA was knocked out to our coolship at a cool temperature over a day zero dry hop of Citra and Simcoe hops and fed a large healthy pitch of a classic german lager yeast for primary fermentation. Brewing could be easier, but would it be as fun??? Look for a restrained ester profile and a burst of hop aroma from hand selected hops in this mixed-style ale.
